How to Make Pesto

If you want to know how to make pesto, you will be so happy to learn that this delicious, beautiful sauce is very easy to make.

It’s a versatile sauce, as it can be used in foods such as pasta, pizzas, or dips.  In my mind it’s a delicacy.

You will need:

Vitamix or food processor

1/3 cup olive oil

1 tablespoon pine nuts

1/2 cup grated Parmesan cheese

3 garlic cloves, minced OR 1 tablespoon of jarred minced garlic

2 cups basil

salt and pepper to taste

 

Here is my best friend, the Vita-mix!  Otherwise known as the blender on steroids (my husband’s name for it).

 

Measure 1/3 cup of olive oil.

1 Tablespoon of pine nuts.

1/2 cup of grated Parmesan

Basil

Break basil leaves off of stems.  You don’t want any stems or flowers…just leaves!

Be sure to wash the basil.

Put all ingredients in Vita-mix or food processor and add the tablespoon of minced garlic…

…and watch it go!

And this is what you end up with!

This is why I love pesto:

  1. It’s fresh
  2. It’s beautiful
  3. It smells good
  4. You get 12% of your daily vitamin A and 9% of your calcium in 2 tablespoons!
