Our family tries to rest on Sundays — but unfortunately they sometimes seem a little crazy!
We usually crave a delicious, home-cooked meal, but a shortage on time usually means we scramble for whatever we can find. (Shhh don’t tell anybody but sometimes we just go get a sub from a local deli!)
In my mind, the perfect Sunday recipes are ones that are hearty, filling and easy that allow my family to enjoy time together!
Here is one of my favorites that you can fix in the morning and then it’s ready by lunchtime!
Slow Cooker Chicken and Vegetables
You will need:
Slow cooker
4 boneless skinless chicken breasts
1 can cream of chicken condensed soup (reduced fat)
1 can cream of mushroom OR cream of celery (reduced fat)
5-6 red skin potatoes
onion powder, 1/2 tablespoon
salt, 1 tsp
pepper, 1 tsp
water
Instructions:
Empty cans of soup into slow cooker. Fill one can with water and add water to slow cooker, then mix water with soup. Next, wash and cut red skin potatoes in half and add to slow cooker. Add carrots, onion powder, salt and pepper. Stir all ingredients. Then, add chicken breasts and cover with some of the soup and vegetable mixture. Cook on high for 4-5 hours.
