Homemade Food Gifts: Chocolate Peppermint Peanut Butter

homemade food gift I love homemade food gifts because they are fun to make, unique and usually quite tasty!

Lately, I’ve been having lots of fun in the kitchen making peanut butter and trying new things.

The only thing (other than strong coffee) I love almost as much as chocolate and peanut butter? Peppermint!

All you need is 4 ingredients to make a delicious, beautiful homemade food gift (if you can stand to give it away!):

  • Peanuts
  • Dark chocolate chips
  • Peppermints
  • Peppermint extract

1.  Make your chocolate peanut butter. (see directions here)

chocolate peanut butter in vitamix 2.  Put peppermints in ziplock freezer bag and crush.  (I used a knife)  Crush them smaller than this picture shows.  Next time I will definitely crush them into smaller pieces.

homemade food gift peppermints 3.  Put chocolate peanut butter in a mixing bowl and stir in 1/8 tsp peppermint extract.

homemade food gift peppermint extract 4.  Fill mason jar about 1/2 way with chocolate peanut butter and then add a layer of crushed peppermints.  Add some more peanut butter, then add a layer of peppermints to the top.

peppermint peanut butter If giving as a gift, include the directions to stir well before eating.  Enjoy this homemade food gift as a spread on crackers or English muffin.  Or straight out of the jar!

Chocolate Peanut Butter {a new twist}

So, why not find some fun new ways to make it even more tasty?

After you have made your chocolate peanut butter, turn it into pretzel peanut butter!

I like pretzels, but they aren’t something I normally love.

But I loved this chocolate peanut butter variation and it was a fun little kid-friendly snack for the kiddos!

Chocolate Peanut Butter Recipe

chocolate peanut butter recipe If you’re like me and get a puzzled look on your face while trying to decide whether you like chocolate or peanut butter more, then this chocolate peanut butter recipe is for YOU!

Here’s the great thing: it requires two (that’s right, just two!) ingredients.  Guess what those are!

This is almost as easy as when we saw how to make peanut butter before.  Just one little extra step.

What You Will Need

1/2 cup dark chocolate chips

2 cups honey roasted peanuts

A food processor (I used my Vita-Mix)

 

I used a store-brand honey roasted peanuts and Ghiradelli dark chocolate chips that are oh so good!

chocolate peanut butter vitamix Process until smooth.  With the Vita-mix, I processed it twice just to get it extra smooth!

Pumpkin Chocolate Chip Muffins

Pumpkin chocolate chip muffins In case you haven’t figured out by now, I love pumpkin. And I don’t just love it for the taste, I also love all of the Vitamin A that I sneak into my family’s diet!

Lately I’ve been making pumpkin butter, light and crustless pumpkin cheesecake, and pumpkin chocolate chip muffins!

I found a wonderful recipe for them, but it wasn’t quite healthy enough for what I know will be the Little Buddy and Little Stinker’s breakfast some days.  So, I did some tweaking until it was not only fairly healthy, but very tasty!

Here’s what you will need:

Dry ingredients

2 cups whole wheat flour (I use King Arthur’s Unbleached White Whole Wheat Flour)

1 cup all purpose flour

1 1/2 cups sugar

1 1/2 tsp baking powder

1 1/2 tsp cinnamon

1/2 tsp baking soda

1 tsp salt

1/2 tsp ground nutmeg

Wet Ingredients:

1 egg

3 egg whites (or 3/4 cup egg substitute)

1 (15 oz) can pure pumpkin

1/2 cup unsweetened applesauce

1/2 cup canola oil

Mix in at the end:

1 cup chocolate chips

Get started making these delicious pumpkin chocolate chip muffins!!!

1.  In one bowl, combine the dry ingredients.

2.   Combine all of the wet ingredients in a separate bowl.

3.  Combine the wet ingredients with the dry ingredients and mix only until moistened.

pumpkin chocolate chip muffins mixture 5.  Fill greased muffin pan cups about 1/2 – 2/3 full.  Bake at 400 degrees F for 18-21 min.  Be careful not to overbake!

Serving size: 1 muffin

177 calories, 5 g fat, 21 g carbohydrates, 3 g protein
