Healthy Crock Pot Recipes: Cranberry Barbeque Chicken

cranberry chickenThis cranberry chicken is one of those recipes that I couldn’t wait to share with you, because it’s one of my all-time favorites!

The perfect combination when it comes to cooking for the fam: easy AND healthy.

For our family, I know that if I try to prepare a complicated meal every night of the week I will not only be exhausted, but very frustrated.  And that’s why I love this healthy crock pot recipe.

If you don’t do much crock pot cooking already, you are missing out on a (usually) simple, delicious way to cook.  So this would be the perfect recipe to get started!

A friend gave me this recipe a few years ago {thanks, Carly!} and I did alter some things to make it a little easier.  Because I do love easy.

What You Will Need

4 Chicken Breasts (boneless, skinless)

1/2 tsp salt

1/2 tsp pepper

2 tsp onion powder

16-oz can of whole berry cranberry sauce

1 cup barbeque sauce (I always use Sweet Baby Ray’s original)

1/4 cup worcestershire sauce

1. In a bowl, mix the cranberry sauce with the barbeque sauce.

whole cranberry sauce2.  Add worcestershire sauce, salt, pepper and onion powder and mix. 

3.  Lay the 4 chicken breasts in the crock pot and cover with the sauce mixture.

chicken and cranberry sauce4. Cook on low for 6-8 hours (I always do close to eight) or high for 4 hours.

Gnocchi and Chicken Soup

gnocchi and chicken soupI have discovered a new food that I love: gnocchi!

I had seen a package of gnocchi in the pasta aisle of the grocery store, but never known what you are supposed to do with it.

gnocchiWell, the gnocchi we used is made with potato, but I have read that other types do exist!

If you are in need of a dumpling-like comfort food to warm you on a cool fall or winter day, gnocchi is your food.

Here is a simple, delicious dish you can make using gnocchi:

Gnocchi and Chicken Soup

Here’s what you’ll need:

4 chicken breasts

4 cups chicken stock

1 celery stalk, chopped

2 tsp garlic powder

1/2 carrot cut into small pieces or shredded

1/2 onion, diced

1 cup fresh, chopped spinach

1/2 cup sliced mushrooms

1 Tbsp olive oil

1 tsp thyme (optional)

salt and pepper to taste

1 16-oz package of potato gnocchi

1 Tbsp cornstarch (optional

1. Roast the chicken breasts until thoroughly done.

2. Saute onion, celery, garlic and carrot over medium heat in olive oil.

3. Add chicken stock, chicken (if you want to cut up the chicken and eat it in the soup), half and half, salt, pepper, and thyme.

4.  Bring to a gentle boil and add potato gnocchi.  Boil for 4 min and then turn down and let it simmer for 15 minutes.

gnocchi soup5. Add spinach and cook for about 3 minutes longer.

6.  If you prefer a thicker soup, add some cornstarch dissolved in water and boil briefly.

Strawberry Spinach Salad Recipe


strawberry spinach salad recipeThis strawberry spinach salad recipe is the perfect balanced meal: lean protein, fruit and vegetables!

Even if you’re not a big fan of salads, you must try this one.

This is even a perfect recipe for serving to guests, as it is truly a beautiful entree.

What you will need:

To save time, buy a box or bag of spinach or mixed greens.

Strawberries (1 cup)

Pecan halves (1 cup)

Boneless, skinless chicken breasts (4 breasts)

For strawberry vinaigrette dressing (recipe came from here):

Olive oil (1/3 cup)

Honey (1/4 cup)

Strawberries (3-4)

Red wine vinegar (1/4 cup)

1. Bake boneless skinless chicken breast. Cut into pieces or strips.

2. Cut strawberries into slices.

3. Toast the almonds and break into smaller pieces.

4. Make vinaigrette following these directions.

5. Lay mixed greens into bottom of dishes. Add chicken, strawberries and pecans.  Pour vinaigrette over each serving.
