Here’s an easy vegetable lasagna recipe for those of you who are trying to go meatless for some meals!
Moms and Mindless Eating
The days I am home with the boys (and not working my part-time job), I have a tendency to do a lot of mindless eating.
Mindless eating can include but is not limited to:
- Fixing your child a snack and having a little handful of his/her goldfish.
- Getting a little “snack” from Starbucks when you are getting your coffee while running errands. (FYI – even their new line of de-lic-ious new “minis” are usually close to 200 calories!)
- Getting a couple of spoonfuls of yogurt while fixing your child a bowl.
- Grabbing a piece of cheese out of the refrigerator…just because.

Peach Bread Recipe
I’m a southern girl. Actually, I’m even a “Georgia Peach” technically (born and partially raised in Georgia), so summer must include a little bit of peaches. And what better place to find a peach recipe than Southern Living? A Spiced Peach Bread!
I will admit that this is not something you would want to have around the house every day. It’s one of those “special-little-treats-that-I-could-potentially-overeat-if-left-to-my-own-devices” kinds of food. The dietitian in me must encourage you to distribute evenly to everyone in the household to prevent weight gain!
Here’s the great thing, though. My oldest, W, is such.a.picky.eater. Ask anyone in our family (and probably most of our friends that have been around him at mealtime). We tried to force a peach down him one time with bribery and it didn’t work. Not even a brand spankin’ new Transformer did the trick.
But…he did LOVE this peach bread.
This bread also has carrots in it, which he still doesn’t know to this day. This particular loaf was made without pecans, which does save some calories.
I plan to make this soon with some substitutions that would make it even healthier…hopefully will still taste good.
This is the perfect time of year to try this recipe while there are ripe peaches in the store!
C loved it too and fussed for more…just like I did when it was gone!

Welcome to Across the Kitchen Table!
Lately, I have had this growing realization that part of our “problem” with obesity these days is related to how we view food. Working in the field of bariatrics, I hear over and over from patients that they just “don’t cook.” There’s a part of me that sympathizes with that.
I’m not a natural-born cook. In fact, in college we had classes that involved food science and I was as nervous in those classes as I was in my organic Chemistry! Growing up, I could have learned more from my mom but I was always more interested in other things that were “more important.”
But I have always been interested in being healthy. And part of being healthy does usually involve some food prep. I have grown to enjoy cooking and am loving experimentation with new recipes and new ways of food preparation.
Having a family (a husband and 2 small children), I feel so much more passionate than ever that we need to live a healthy lifestyle. As a very busy mom, I love finding quick, healthy, and delicious recipes. I love making some things from scratch. And I LOVE it when I somehow sneak something healthy into my almost-5-year-old-pickiest-eater-I’ve-ever-known’s mouth!
It’s so easy for busy families (including mine) to not take the time to sit across the kitchen table for dinner (or other meals) and savor our food and time together. But it is so rewarding when we do – in spite of the 2 year old’s ear-piercing squeals!
Join me on my constant endeavor to find new ways to make the kitchen table enjoyable, inviting and relaxing — with delicious, healthy (usually) food that the whole family enjoys.
