Meatless Menu Plan

Want to save money and time?  Who doesn’t?

We have slowly been cutting back on how much meat we eat, and it has been pretty painless.  There are so many delicious meals that require no meat.  Which means less prep time.  Less sanitizing the counters after cooking.  That’s always good.

We are going meatless this week!

It is, of course, important to get adequate protein.  We still do eggs for breakfast some days and use milk and cheese.  As a dietitian, I have always known that you don’t have to have meat at every meal.  My husband has also grown to realize this, as I’ve cooked some pretty good meatless meals recently.

Weekly Meatless Menu Plan:

Monday: Meatless Baked Spaghetti (made with delicious homemade spaghetti sauce and Barilla plus pasta)

Tuesday: Black Beans and Rice

Wednesday: Leftovers with collards (made the healthy way) and homemade cornbread

Thursday
:  Spicy Black Bean Burgers with baked potato and green beans

Friday
: Homemade Veggie Pizza

Saturday
: Pancakes and eggs (been CRAVING pancakes lately!)

Sunday
: Green Smoothie (we’ll probably eat a bigger lunch)
If you are used to eating meat at most, if not all meals, then a meatless meal probably sounds boring, unsatisfying, incomplete.  You may be surprised, however, how satisfying a meatless meal can be.
I love meat, but honestly, I don’t love cooking it.  As a busy mom, I love saving time and hassle.
Sources of protein (other than meat):
  • Tofu
  • Cheese
  • Beans/Lentils
  • Eggs
  • Nuts/seeds
I’d like to challenge you to make a conscious effort to try some new meatless meals!
Some of my favorites are meatless mexican lasagna and vegetable lasagna.
